When life hands you rotten bananas

We go through phases with bananas around here. They either get gobbled up within two days, or they sit until they become freckled and then brown. And no one wants to eat brown bananas. Well, maybe Jack, but he’ll just ask for them incessantly until he gets a taste of how overripe they are…
Instead of falling for that (again), I make one mean banana bread. The one pictured in our happy Sunday morning scene, complete with blurry toddler in the background, brightly coloured plastic toys and a cup of coffee, is Banana-Almond-Date Bread. (Basically, a banana bread recipe with improvisation that tasted really really good).
Ingredients:
2 stupidly ripe bananas
1 cup of dates, chopped
1 cup of almonds, chopped
1/3 cup melted butter
3/4 cup sugar
1 egg, beaten
1 tsp vanilla
1 tsp baking soda
1-1/2 cup flour
Pinch of salt
Here’s what you do:
Preheat your oven to 350F. In a large bowl, mix butter into the bananas. Add your sugar, egg and vanilla. Sprinkle the baking soda and salt over the mixture and stir it in. Mix in your flour, then add your dates and almonds. Pour into a buttered loaf pan and bake for 1 hour.

Our blog never had recipes in it until recently with the chocolate cake, but these sort of recipes have come with our slight change in lifestyle as being parents. Gone are the days where we go for impromptu late-night walks to the cafĂ© down the street from our downtown apartment. Now we are more likely to find a decent recipe and enjoy that with a hot cup of tea while catching up on TV as our son snores upstairs. Maybe that makes us “grown-ups” finally?
